  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup sliced yellow onion
  • 1 cup sliced green bell pepper
  • 1 cup sliced carrots
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 8 ounces fresh yakisoba noodles
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon ketchup
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 2 green onions, thinly sliced (for garnish)
  • Toasted sesame seeds (for garnish)


Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add yellow onion, green bell pepper, and carrots to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  4. Add minced garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant.
  5. Add the cooked chicken back to the skillet.
  6. Add the yakisoba noodles to the skillet.
  7. In a small bowl, whisk together soy sauce, oyster sauce, ketchup, sugar, and white pepper.
  8. Pour the sauce over the noodles and chicken. Toss everything together to coat evenly. Cook for 2-3 minutes, stirring occasionally, until noodles are heated through and sauce has thickened slightly.
  9. Serve immediately, garnished with sliced green onions and toasted sesame seeds.

Notes

  • You can substitute chicken breast for chicken thighs if preferred.
  • Feel free to add other vegetables like broccoli, mushrooms, or snap peas.
  • Adjust the sauce ingredients to your taste – add more sugar for sweetness or more soy sauce for saltiness.
