Creamy Tuscan Chicken Sausage Pasta Skillet

Description

Make this easy, one-pan creamy Tuscan chicken sausage pasta for a quick weeknight dinner.


Ingredients

  • 1 pound dried pasta (penne or rotini)
  • 1 tablespoon olive oil
  • 1 pound pre-cooked chicken sausage, sliced
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, drained and chopped


Instructions

  1. Cook pasta according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook until lightly browned, about 4 minutes. Remove sausage and set aside.
  3. Add onion to the skillet and cook until softened, about 3 minutes. Add garlic, Italian seasoning, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for 2 minutes.
  5. Reduce heat to low. Stir in heavy cream and Parmesan cheese until the sauce thickens slightly.
  6. Stir in the spinach until it wilts. Add the sun-dried tomatoes and the cooked chicken sausage back into the skillet.
  7. Add the drained pasta to the skillet. Toss everything to coat. If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
  8. Serve immediately.

  • Use smoked chicken sausage for a deeper flavor profile.
  • For a healthier option, substitute half-and-half for heavy cream.
  • You can add other vegetables like mushrooms or bell peppers with the onion.
