- 2 Boneless, skinless chicken breasts (about 6 oz each)
- 1/2 cup All-purpose flour
- 2 Large eggs, beaten
- 1 cup Italian seasoned breadcrumbs
- 1/4 cup Grated Parmesan cheese (for breading)
- 2 tablespoons Olive oil
- 1 cup Marinara sauce (good quality)
- 4 slices Fresh mozzarella cheese
- 2 tablespoons Grated Parmesan cheese (for topping)
- Salt and Black pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a small baking dish.
- Pound the chicken breasts to an even 1/2-inch thickness. Season both sides with salt and pepper.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with 1/4 cup Parmesan cheese.
- Dredge each chicken breast first in flour, shaking off excess. Dip into the egg, letting excess drip off. Finally, press firmly into the breadcrumb mixture to coat well.
- Heat olive oil in a large skillet over medium-high heat. Pan-fry the chicken for 3-4 minutes per side until golden brown. You are only browning the outside; it will finish cooking in the oven.
- Place the browned chicken breasts into your prepared baking dish.
- Spoon marinara sauce over each piece of chicken. Top each with two slices of fresh mozzarella cheese.
- Sprinkle the remaining 2 tablespoons of Parmesan cheese over the mozzarella.
- Bake for 12-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Let the chicken rest for a few minutes before serving. Garnish with fresh basil. Enjoy your romantic meal!
