  • 2 Boneless, skinless chicken breasts (about 6 oz each)
  • 1/2 cup All-purpose flour
  • 2 Large eggs, beaten
  • 1 cup Italian seasoned breadcrumbs
  • 1/4 cup Grated Parmesan cheese (for breading)
  • 2 tablespoons Olive oil
  • 1 cup Marinara sauce (good quality)
  • 4 slices Fresh mozzarella cheese
  • 2 tablespoons Grated Parmesan cheese (for topping)
  • Salt and Black pepper to taste
  • Fresh basil for garnish


Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a small baking dish.
  2. Pound the chicken breasts to an even 1/2-inch thickness. Season both sides with salt and pepper.
  3. Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with 1/4 cup Parmesan cheese.
  4. Dredge each chicken breast first in flour, shaking off excess. Dip into the egg, letting excess drip off. Finally, press firmly into the breadcrumb mixture to coat well.
  5. Heat olive oil in a large skillet over medium-high heat. Pan-fry the chicken for 3-4 minutes per side until golden brown. You are only browning the outside; it will finish cooking in the oven.
  6. Place the browned chicken breasts into your prepared baking dish.
  7. Spoon marinara sauce over each piece of chicken. Top each with two slices of fresh mozzarella cheese.
  8. Sprinkle the remaining 2 tablespoons of Parmesan cheese over the mozzarella.
  9. Bake for 12-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  10. Let the chicken rest for a few minutes before serving. Garnish with fresh basil. Enjoy your romantic meal!
