Ingredients

  • 1 lb ground chicken
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup low-sodium soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce (optional, check carb count)
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 2 cups shredded iceberg or butter lettuce leaves
  • 1/4 cup chopped water chestnuts (drained)
  • 2 green onions, sliced (for garnish)


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until softened, about 3 minutes.
  3. Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is no longer pink.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. Pour in the soy sauce, rice vinegar, hoisin sauce (if using), sesame oil, and black pepper. Mix well.
  6. Cook until the liquid has mostly evaporated, about 5-7 minutes.
  7. Stir in the chopped water chestnuts.
  8. Spoon the chicken mixture into the lettuce cups.
  9. Garnish with sliced green onions before serving. Enjoy your fresh wraps!
