- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 cup broccoli florets
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1/2 cup milk
- 1/4 cup shredded cheddar cheese
- 1/4 cup breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook until browned on all sides.
- Stir in the uncooked rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
- Add the broccoli florets to the skillet.
- In a separate bowl, mix together the cream of chicken soup and milk. Pour this mixture over the chicken and broccoli.
- Sprinkle the cheddar cheese and breadcrumbs evenly over the top.
- Bake for 20-25 minutes, or until the casserole is bubbly and the breadcrumbs are golden brown.
