Description

Make this easy, one-dish Creamy Chicken Broccoli Rice Casserole for a satisfying family dinner. It combines tender chicken, fresh broccoli, and fluffy rice in a rich, cheesy sauce, perfect for busy weeknights.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or cubed
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 1 cup uncooked long-grain white rice
  • 2 cups fresh broccoli florets
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup crushed butter crackers (optional, for topping)
  • 2 tablespoons melted butter (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Cook the rice according to package directions until tender. You will need 2 cups of cooked rice.
  3. In a large bowl, whisk together the cream of chicken soup, cream of mushroom soup, mayonnaise, sour cream, onion powder, garlic powder, salt, pepper, and milk until smooth. This creates your creamy base.
  4. Gently fold in the cooked chicken, cooked rice, broccoli florets, and 1 1/2 cups of the shredded cheddar cheese into the soup mixture until everything is evenly coated.
  5. Transfer the mixture to your prepared baking dish. Spread it out evenly.
  6. In a small bowl, mix the remaining 1/2 cup of cheddar cheese with the crushed butter crackers and melted butter, if using. Sprinkle this topping evenly over the casserole.
  7. Bake for 30 to 35 minutes, or until the casserole is bubbly throughout and the topping is golden brown.
  8. Let the casserole rest for 5 to 10 minutes before serving. This helps the dish set.

Notes

  • For a make-ahead option, assemble the casserole completely, cover it tightly, and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time if baking straight from the refrigerator.
  • If you prefer a lighter version, substitute half of the mayonnaise with plain Greek yogurt.
  • You can use pre-cooked rice or leftover rice to save time on a busy weeknight.
