- 2 cups all-purpose flour
- 1 tablespoon baking powder

Instructions
- Place chicken, broth, carrot, celery, onion, thyme, and bay leaf in a large pot.
- Bring to a boil, then reduce heat and simmer until chicken is cooked through, about 30 minutes.
- Remove chicken and shred it. Discard the bay leaf. Return shredded chicken to the broth.
- In a bowl, whisk together flour, baking powder, and salt for the dumplings.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk until just combined to form a soft dough. Do not overmix.
- Drop spoonfuls of the dumpling dough onto the simmering chicken mixture.
- Cover the pot and cook for 15 minutes without lifting the lid.
