Instructions
- In a medium bowl, combine the grated zucchini, cheddar cheese, flour, eggs, onion, parsley, salt, and pepper. Mix well until all ingredients are incorporated.
- Heat the olive oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon.
