- 1 onion, chopped
- 1 packet (1 ounce) taco seasoning
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) kidney beans, rinsed and drained
- 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado, cilantro
Instructions
- Brown ground beef and chopped onion in a large pot over medium-high heat. Drain excess fat.
- Stir in taco seasoning, diced tomatoes, black beans, kidney beans, Rotel, and beef broth.
- Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
- Ladle soup into bowls. Top with shredded cheddar cheese and your favorite toppings.
Notes
- For a spicier soup, use a spicier taco seasoning or add a pinch of cayenne pepper.
- If you don’t have fresh onions, you can use 1 teaspoon of onion powder.
