Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet (1 ounce) taco seasoning
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 4 cups beef broth
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, salsa, avocado, cilantro


Instructions

  1. Brown ground beef and chopped onion in a large pot over medium-high heat. Drain excess fat.
  2. Stir in taco seasoning, diced tomatoes, black beans, kidney beans, Rotel, and beef broth.
  3. Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
  4. Ladle soup into bowls. Top with shredded cheddar cheese and your favorite toppings.

Notes

  • For a spicier soup, use a spicier taco seasoning or add a pinch of cayenne pepper.
  • If you don’t have fresh onions, you can use 1 teaspoon of onion powder.
  • This recipe is easily adaptable. Feel free to add other vegetables like corn or bell peppers.
