- 1 pound pasta (penne, rotini, or shells work well)
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 10 ounces frozen chopped spinach, thawed and squeezed dry
- 14 ounces artichoke hearts, drained and chopped
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup grated Parmesan cheese, plus more for topping
- 1 cup shredded mozzarella cheese, plus more for topping
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Cook pasta according to package directions until al dente. Drain and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the thawed and squeezed spinach and chopped artichoke hearts. Cook for 2-3 minutes, stirring occasionally.
- In a large bowl, combine the softened cream cheese, sour cream, mayonnaise, and 1/2 cup Parmesan cheese. Stir until smooth.
- Add the cooked pasta, spinach-artichoke mixture, and 1 cup mozzarella cheese to the cream cheese mixture. Stir gently until everything is well combined. Season with salt and pepper to taste.
- Pour the mixture into a greased 9×13 inch baking dish.
- Top with additional mozzarella cheese and Parmesan cheese.
- Bake for 20-25 minutes, or until bubbly and golden brown on top.
- Let stand for a few minutes before serving.
Notes
- For an extra layer of flavor, add a pinch of red pepper flakes to the spinach and artichoke mixture.
- You can make this bake ahead of time. Assemble it, cover, and refrigerate. Add a few extra minutes to the baking time if baking from cold.
- Serve with a side salad or crusty bread for a complete meal.
