- 2 cups fresh spinach
- 8 large eggs

Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Add chopped garlic scapes and cook until softened, about 3-5 minutes.
- Add spinach and cook until wilted.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Pour egg mixture over the vegetables in the skillet.
- Sprinkle cheese over the top.
- Transfer skillet to the preheated oven.
- Bake for 15-20 minutes, or until the frittata is set and the cheese is melted and bubbly.
- Let cool slightly before slicing and serving.
