  • 1 cup chopped garlic scapes
  • 2 cups fresh spinach

  • 1/4 cup milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in an oven-safe skillet over medium heat.
  3. Add chopped garlic scapes and cook until softened, about 3-5 minutes.
  4. Add spinach and cook until wilted.
  5. In a bowl, whisk together eggs, milk, salt, and pepper.
  6. Pour egg mixture over the vegetables in the skillet.
  7. Sprinkle cheese over the top.
  8. Transfer skillet to the preheated oven.
