  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried Italian seasoning

  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • Optional: 4 slices bacon, cooked and crumbled
  • Optional: 1/4 cup chopped dill pickles


Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain off any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more.
  3. Pour in the beef broth. Add the diced potatoes, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  4. In a small bowl, whisk together the flour and milk until smooth. Pour this mixture into the simmering soup, stirring constantly until the soup thickens slightly.
  5. Reduce the heat to low. Stir in the shredded cheddar cheese until it is completely melted and the soup is creamy. Do not let the soup boil after adding cheese.
  6. Remove the pot from the heat. Stir in the sour cream until fully incorporated.
