Make these delicious Cheddar Cauliflower Bites for a satisfying, low-carb snack. They are easy to prepare and perfect for satisfying your cravings.
Ingredients
Scale
- 1 medium head cauliflower, chopped into florets
- 1 cup shredded sharp cheddar cheese
- 1 large egg, lightly beaten
- 1/4 cup almond flour
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Process the cauliflower florets in a food processor until they resemble rice or fine crumbs.
- Place the cauliflower rice in a microwave-safe bowl and microwave for 3-4 minutes until tender. Let it cool slightly.
- Place the cooled cauliflower rice in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is important for crispy bites.
- In a medium bowl, combine the dried cauliflower, cheddar cheese, egg, almond flour, garlic powder, onion powder, salt, and pepper. Mix well until everything is incorporated.
- Scoop tablespoon-sized portions of the mixture and shape them into small, bite-sized balls or small patties. Place them on the prepared baking sheet.
- Bake for 18-20 minutes, flipping halfway through, until the bites are golden brown and firm.
- Let them cool for a few minutes before serving. Enjoy your low-carb treat!
Notes
- Squeezing the moisture from the cauliflower is key to getting the right texture.
- You can add a pinch of cayenne pepper for a little heat.
- These reheat well in a toaster oven for extra crispness.
