- 4 ears of corn, husked and cleaned
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Optional toppings: mayonnaise, cotija cheese, chili powder, lime wedges
Instructions
- Preheat your grill to medium-high heat or set your broiler to high.
- Brush the corn evenly with olive oil. Season with salt and pepper.
- For direct flame: Place the corn directly on the grill grates. Turn the corn frequently, about every 2-3 minutes, until kernels are tender and charred in spots. This should take about 10-15 minutes.
- For broiler: Place the corn on a baking sheet. Position the baking sheet about 4-6 inches from the broiler. Turn the corn every 3-5 minutes until tender and charred. This will also take about 10-15 minutes.
- Once charred, remove the corn from the heat.
- Serve immediately with your favorite toppings.
Notes
- For an extra smoky flavor, you can add wood chips to your grill.
- Don’t be afraid of some charring; it adds to the smoky taste.
