- 1 cup heavy cream
- 8 ounces good quality dark chocolate, finely chopped
- 2 tablespoons unsalted butter, room temperature
- 1/4 cup champagne (brut recommended)
- 1 tablespoon champagne reduction (optional, for stronger flavor)
- Cocoa powder or melted chocolate for coating
Instructions
- Heat the heavy cream in a small saucepan until it just simmers. Do not boil.
- Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate. Let it sit undisturbed for 5 minutes.
- Gently whisk the chocolate and cream mixture until smooth and fully combined.
- Whisk in the room temperature butter until the ganache is glossy.
- Stir in the champagne and the optional champagne reduction. Mix until just incorporated.
- Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache.
- Refrigerate the ganache for at least 4 hours, or until firm enough to scoop.
- Scoop the chilled ganache using a small spoon or melon baller. Roll into smooth balls between your palms.
- Return the rolled truffles to the refrigerator for 15 minutes to firm up again.
- Roll the chilled truffles in cocoa powder or dip them in melted chocolate to coat.
- Store the finished truffles in an airtight container in a cool place or refrigerator.
