Ingredients

  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup champagne, plus more for glaze
  • 1 cup powdered sugar
  • Edible glitter


Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter and mix until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the eggs, milk, vanilla extract, and 1/4 cup champagne.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  6. Spoon the batter evenly into the prepared cupcake liners, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cupcakes cool, prepare the glaze. In a small bowl, whisk together 1/4 cup champagne and the powdered sugar until smooth. Add more champagne or powdered sugar as needed to reach your desired consistency.
  10. Once the cupcakes are completely cool, dip the tops into the champagne glaze.
  11. Immediately sprinkle edible glitter over the wet glaze.
  12. Let the glaze set before serving.
