  • Author: Lina Kohn
  • Total Time: 1 hour 20 minutes
  • Yield: 8 servings

Description

A comforting tart featuring spiced pears and a nutty crumble.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup cold unsalted butter, cubed
  • 1/4 cup ice water
  • 4 ripe pears, peeled, cored, and sliced
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon chai spice blend
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1 cup rolled oats
  • 1/2 cup chopped almonds
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted

Instructions

  1. Make the pastry: In a large bowl, whisk together 2 cups flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Prepare the filling: In a bowl, combine sliced pears, 1/4 cup brown sugar, 2 tablespoons flour, chai spice, ginger, and cardamom. Toss to coat the pears evenly.
  3. Make the crumble topping: In a separate bowl, combine oats, almonds, 1/4 cup brown sugar, and melted butter. Mix until well combined.
  4. Roll out the chilled dough on a lightly floured surface into a 12-inch circle. Carefully transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the bottom and up the sides of the pan. Trim any excess dough.
  5. Pour the pear filling into the tart shell. Sprinkle the crumble topping evenly over the pears.
  6. Bake in a preheated oven at 375°F (190°C) for 40-50 minutes, or until the crust is golden brown and the filling is bubbling.
  7. Let the tart cool slightly before serving.

Notes

  • Ensure your butter is very cold for a flaky crust.
  • Adjust the amount of chai spice to your preference.
