- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- Salt and black pepper to taste
- 8 ounces feta cheese block
- 1 pound pasta of your choice
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until soft and golden brown, about 20-30 minutes.
- Stir in balsamic vinegar and sugar. Continue to cook for a few more minutes until the onions are deeply caramelized. Season with salt and pepper.
- While the onions are caramelizing, cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
- Add the block of feta cheese to the skillet with the caramelized onions.
- Add the drained pasta to the skillet with the onions and feta.
- Stir everything together, allowing the feta to melt and create a creamy sauce. Add some reserved pasta water if needed to reach desired consistency.
- Serve immediately, garnished with fresh basil or parsley if desired.
