Description

Sweet caramelized onions and creamy feta cheese combine for a simple, flavorful pasta dish.


Ingredients

  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 8 ounces feta cheese block
  • 1 pound pasta of your choice
  • Fresh basil or parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until soft and golden brown, about 20-30 minutes.
  2. Stir in balsamic vinegar and sugar. Continue to cook for a few more minutes until the onions are deeply caramelized. Season with salt and pepper.
  3. While the onions are caramelizing, cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  4. Add the block of feta cheese to the skillet with the caramelized onions.
  5. Add the drained pasta to the skillet with the onions and feta.
  6. Stir everything together, allowing the feta to melt and create a creamy sauce. Add some reserved pasta water if needed to reach desired consistency.
  7. Serve immediately, garnished with fresh basil or parsley if desired.

  • Adjust the amount of balsamic vinegar and sugar to your preference.
