Description

Enjoy these delicious Caprese Stuffed Avocado Boats, a perfect light and healthy meal for a warm summer day. They are easy to make and bursting with fresh flavors.


Ingredients

  • 2 avocados, ripe
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh mozzarella pearls, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the avocados in half lengthwise and remove the pits.
  3. Scoop out about a tablespoon of avocado flesh from each half to create a larger cavity. You can save this scooped avocado for another use.
  4. In a small bowl, combine the halved cherry tomatoes, mozzarella pearls, chopped basil, olive oil, salt, and pepper.
  5. Gently toss the ingredients together.
  6. Spoon the Caprese mixture evenly into the avocado halves.
  7. Place the stuffed avocados on a baking sheet.
  8. Bake for 10-12 minutes, or until the mozzarella is slightly melted and the tomatoes are softened.
  9. Drizzle with balsamic glaze before serving.

Notes

  • For best results, use ripe but firm avocados.
  • You can add a pinch of red pepper flakes for a touch of heat.
  • Feel free to add other herbs like oregano or parsley.
