- 2 avocados, ripe
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh mozzarella pearls, halved
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons balsamic glaze
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the avocados in half lengthwise and remove the pits.
- Scoop out about a tablespoon of avocado flesh from each half to create a larger cavity. You can save this scooped avocado for another use.
- In a small bowl, combine the halved cherry tomatoes, mozzarella pearls, chopped basil, olive oil, salt, and pepper.
- Gently toss the ingredients together.
- Spoon the Caprese mixture evenly into the avocado halves.
- Place the stuffed avocados on a baking sheet.
- Bake for 10-12 minutes, or until the mozzarella is slightly melted and the tomatoes are softened.
- Drizzle with balsamic glaze before serving.
