A refreshing Caprese Pasta Salad perfect for a light summer meal.
Ingredients

- 1 pound pasta
- 1 pint cherry tomatoes, halved
- 8 ounces fresh mozzarella balls, halved or quartered
- 1/2 cup fresh basil leaves, torn
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic glaze
- Salt to taste
- Black pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cool water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, fresh mozzarella, and basil.
- In a small bowl, whisk together the olive oil and balsamic glaze.
- Pour the dressing over the pasta mixture.
- Toss gently to combine all ingredients.
- Season with salt and pepper to your liking.
- Serve immediately or chill for later.

- For a heartier salad, add grilled chicken or shrimp.
- You can use different types of pasta, like rotini or farfalle.
