  • 4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried oregano
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 4 ounces fresh mozzarella cheese, sliced
  • Balsamic glaze, for drizzling (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt, pepper, and oregano.
  3. Sear chicken in the hot skillet for 3-4 minutes per side, until golden brown. Remove chicken from skillet and set aside.
  4. Add diced tomatoes and minced garlic to the skillet. Cook for 2-3 minutes, stirring occasionally, until fragrant.
  5. Return chicken to the skillet.
  6. Top each chicken breast with sliced mozzarella cheese.
  7. Cover the skillet and cook for 5-7 minutes, or until mozzarella is melted and bubbly and chicken is cooked through.
  8. Garnish with fresh basil and drizzle with balsamic glaze, if desired.
