Instructions

  1. Pat the shrimp dry with paper towels. Toss the shrimp with Cajun seasoning until evenly coated.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the seasoned shrimp to the hot skillet in a single layer. Cook for 2-3 minutes per side, until pink and cooked through.
  4. Warm the corn tortillas according to package directions (you can wrap them in a damp paper towel and microwave for 30-60 seconds, or warm them in a dry skillet).
