  • 1 pound large shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 2 bell peppers (any color), chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup uncooked white rice
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
  4. Stir in garlic and cook for 1 minute more until fragrant.
  5. Add diced tomatoes, chicken broth, uncooked rice, Cajun seasoning, and smoked paprika. Stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  7. Stir in the cooked shrimp and heat through for 2-3 minutes.
  8. Season with salt and black pepper to taste.
  9. Garnish with fresh parsley before serving.
