- 1 (3-pound) butternut squash, peeled, seeded, and cubed
- 4 cups vegetable broth

Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic, ground ginger, cinnamon, nutmeg, and cloves. Cook for 1 minute more until fragrant.
- Add the cubed butternut squash and vegetable broth to the pot. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until the squash is very tender.
- Carefully transfer the soup to a blender (or use an immersion blender directly in the pot). Blend until smooth and creamy. You may need to do this in batches.
- Return the pureed soup to the pot. Stir in the milk (or cream). Heat gently until warmed through; do not boil.
- Season with salt and freshly ground black pepper to taste.
- Ladle the soup into bowls. Garnish with toasted pumpkin seeds, a swirl of cream, or fresh parsley if desired.
