Instructions
- Beat the softened butter and sugar together until light and fluffy.
- Beat in the egg yolk and vanilla extract until just combined.
- Gradually add the flour and salt. Mix on low speed until a soft dough forms. Do not overmix.
- Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- Roll the dough out to 1/4-inch thickness. Cut into desired shapes using cookie cutters, or form into small balls and gently flatten with a fork.
- Place cookies on the prepared baking sheets.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer flavor, try browning your butter before cooling and using it in the recipe.
- If you prefer a crisper cookie, bake for an additional 1 to 2 minutes.
- These cookies are perfect for decorating with a simple glaze or dusting with powdered sugar after cooling.
