  • 1/4 cup almond flour
  • 1/4 cup finely grated Parmesan cheese
  • 1 large egg
  • 1/4 cup Frank’s RedHot sauce (or your favorite hot sauce)
  • 2 tablespoons melted butter
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the ground chicken, almond flour, Parmesan cheese, egg, garlic powder, salt, and pepper. Mix gently until just combined; do not overmix.
  3. Roll the mixture into small, uniform meatballs (about 1 inch in diameter). Place them on the prepared baking sheet.
  4. Bake for 15-18 minutes, or until the meatballs are cooked through and no longer pink inside.
  5. While the meatballs bake, whisk together the hot sauce and melted butter in a small bowl to create the buffalo sauce.
