- 1/4 cup almond flour

- 1 large egg
- 1/4 cup Frank’s RedHot sauce (or your favorite hot sauce)
- 2 tablespoons melted butter
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the ground chicken, almond flour, Parmesan cheese, egg, garlic powder, salt, and pepper. Mix gently until just combined; do not overmix.
- Roll the mixture into small, uniform meatballs (about 1 inch in diameter). Place them on the prepared baking sheet.
- Bake for 15-18 minutes, or until the meatballs are cooked through and no longer pink inside.
- While the meatballs bake, whisk together the hot sauce and melted butter in a small bowl to create the buffalo sauce.
- Remove the cooked meatballs from the oven. Place them in a clean bowl.
- Pour the buffalo sauce over the warm meatballs and toss gently until they are evenly coated.
- Serve immediately with a side of low-carb ranch or blue cheese dressing for dipping.
