- 1 large head of cauliflower, cut into bite-sized florets
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup unsweetened almond milk (or other milk)
- 1/2 cup buffalo wing sauce (use your favorite)
- 2 tablespoons melted butter (optional, for extra richness)
- Ranch or blue cheese dressing, for serving
- Celery sticks, for serving
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, panko breadcrumbs, garlic powder, onion powder, salt, and pepper.
- In a separate bowl, whisk the almond milk until slightly frothy.
- Dip each cauliflower floret into the almond milk, letting any excess drip off.
- Toss the milk-coated florets into the dry ingredient mixture, ensuring they are well coated.
- Place the coated florets in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- While the cauliflower is baking, prepare the sauce. In a medium bowl, combine the buffalo wing sauce and melted butter (if using). Stir well.
- Once the cauliflower is baked and crispy, add it to the bowl with the buffalo sauce. Gently toss to coat all the florets evenly.
- Return the sauced cauliflower bites to the baking sheet and bake for another 5 minutes, or until the sauce is slightly caramelized.
- Serve immediately with ranch or blue cheese dressing and celery sticks.
Notes
- For extra crispy bites, you can air fry them at 375°F (190°C) for 15-20 minutes, tossing halfway through.
- Adjust the spice level of your buffalo sauce to your preference.
