Description

Instructions

  1. In a large bowl, beat together the peanut butter, softened butter, powdered sugar, vanilla extract, and salt until smooth and creamy. This is your peanut butter filling.
  2. Take one graham cracker and spread a generous layer of the peanut butter filling onto the flat side.
  3. Top with a second graham cracker, pressing gently to create a sandwich. Repeat this process until all graham crackers are used.
  4. Place the sandwiches on a baking sheet lined with parchment paper. Freeze for at least 30 minutes to firm up the filling.
  5. In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth.
  6. Remove the frozen sandwiches from the freezer. Dip each sandwich into the melted chocolate, leaving a small circle of the peanut butter filling exposed at the top, mimicking a Buckeye candy.
