Instructions
- In a large bowl, beat together the peanut butter, softened butter, powdered sugar, vanilla extract, and salt until smooth and creamy. This is your peanut butter filling.
- Take one graham cracker and spread a generous layer of the peanut butter filling onto the flat side.
- Top with a second graham cracker, pressing gently to create a sandwich. Repeat this process until all graham crackers are used.
- Place the sandwiches on a baking sheet lined with parchment paper. Freeze for at least 30 minutes to firm up the filling.
- In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth.
- Remove the frozen sandwiches from the freezer. Dip each sandwich into the melted chocolate, leaving a small circle of the peanut butter filling exposed at the top, mimicking a Buckeye candy.
- Place the dipped sandwiches back onto the parchment-lined sheet.
- Refrigerate for at least 1 hour, or until the chocolate coating is fully set before serving.
Notes
- For a smoother chocolate coating, use tempered chocolate, though this step is optional for a simple no-bake treat.
- If you prefer a firmer filling, chill the peanut butter mixture for 15 minutes before assembling the sandwiches.
