Easy brown butter sour cherry almond bars with a delicious crumble topping.


Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 1 ½ cups all-purpose flour
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup sour cherry jam or filling
  • ½ cup sliced almonds


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a small saucepan, melt the butter over medium heat. Continue to cook, stirring occasionally, until the butter turns a golden brown color and smells nutty. Be careful not to burn it. Remove from heat and let cool slightly.
  3. In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  4. In a large bowl, whisk together the cooled brown butter and granulated sugar until combined.
  5. Whisk in the egg and vanilla extract until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be thick.
  7. Press about two-thirds of the dough evenly into the bottom of the prepared baking pan.
  8. Spread the sour cherry jam or filling over the dough base.
  9. Crumble the remaining dough over the cherry layer. Sprinkle with sliced almonds.
  10. Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbling slightly.
  11. Let cool completely in the pan on a wire rack before lifting out by the parchment paper and cutting into bars.

Notes

  • Make sure the brown butter has cooled slightly before adding it to the sugar.
  • Do not overmix the dough once the dry ingredients are added.
  • Cooling the bars completely before cutting them helps them hold their shape.
