- 1 pound pasta (penne or rotini work well)
- 4 cups vegetable broth
- 1 large head of broccoli, cut into small florets
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1 cup grated Parmesan cheese, plus more for serving
- 2 tablespoons butter
- Salt and black pepper to taste
Instructions
- Place the pasta, vegetable broth, broccoli florets, minced garlic, and butter into a large pot or Dutch oven.
- Bring the mixture to a boil over high heat.
- Once boiling, reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, stirring occasionally until the pasta is cooked through and most of the liquid is absorbed.
- Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
- Season with salt and pepper to your taste.
- Serve immediately with extra Parmesan cheese on top.
Notes
- For a slightly lighter sauce, substitute half-and-half for the heavy cream.
- If the sauce seems too thick after adding the cheese, add a splash of hot water or extra broth until you reach your desired consistency.
- You can add a squeeze of fresh lemon juice at the end for brightness.
