Description
This casserole combines tender broccoli and squash with a creamy cheddar sauce. It is a comforting dish for any meal.

- 1 head broccoli, cut into florets
- 2 medium yellow squash, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups milk
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 2 cups shredded sharp cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup breadcrumbs (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Steam or boil broccoli florets until tender-crisp, about 3-5 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Add diced yellow squash to the skillet and cook until slightly tender, about 7-10 minutes.
- In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly, to make a roux.
- Gradually whisk in milk until smooth. Cook, stirring constantly, until the sauce thickens, about 5-7 minutes.
- Remove from heat and stir in cheddar cheese until melted and smooth. Season with salt and pepper.
- Combine the cooked broccoli and squash in a large baking dish. Pour the cheese sauce over the vegetables and stir gently to combine.
- If desired, sprinkle breadcrumbs over the top for a crispy topping.
- Bake for 20-25 minutes, or until bubbly and lightly golden.
- Let stand for a few minutes before serving.
Notes
- You can use different types of squash, like zucchini or butternut squash.
- For extra flavor, add a pinch of nutmeg to the cheese sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
