Description

This casserole combines tender broccoli and squash with a creamy cheddar sauce. It is a comforting dish for any meal.


Ingredients

  • 1 head broccoli, cut into florets
  • 2 medium yellow squash, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups milk
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil broccoli florets until tender-crisp, about 3-5 minutes. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Add diced yellow squash to the skillet and cook until slightly tender, about 7-10 minutes.
  5. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly, to make a roux.
  6. Gradually whisk in milk until smooth. Cook, stirring constantly, until the sauce thickens, about 5-7 minutes.
  7. Remove from heat and stir in cheddar cheese until melted and smooth. Season with salt and pepper.
  8. Combine the cooked broccoli and squash in a large baking dish. Pour the cheese sauce over the vegetables and stir gently to combine.
  9. If desired, sprinkle breadcrumbs over the top for a crispy topping.
  10. Bake for 20-25 minutes, or until bubbly and lightly golden.
  11. Let stand for a few minutes before serving.

Notes

  • You can use different types of squash, like zucchini or butternut squash.
  • For extra flavor, add a pinch of nutmeg to the cheese sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
