Easy Overnight Breakfast Rolls

Description

Prepare this soft, sweet yeast dough the night before for quick, warm breakfast rolls in the morning.

  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon salt
  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 1/2 cup unsalted butter, softened (for filling)
  • 1/2 cup packed light brown sugar (for filling)
  • 1 tablespoon ground cinnamon (for filling)
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)


Instructions

  1. In a large bowl, combine the warm milk and yeast. Let stand for 5 minutes until foamy.
  2. Stir in the granulated sugar, egg, melted butter, and salt into the yeast mixture.
  3. Gradually add the flour, mixing until a soft dough forms. Knead on a lightly floured surface for 5-7 minutes until smooth.
  4. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled.
  5. Punch down the dough. Roll it out on a lightly floured surface into a 12×18 inch rectangle.
  6. In a small bowl, mix the softened butter, brown sugar, and cinnamon for the filling. Spread this mixture evenly over the dough.
  7. Roll the dough tightly along the long edge to form a log. Cut the log into 12 equal rolls.
  8. Arrange the rolls in a greased 9×13 inch baking pan. Cover the pan tightly with plastic wrap.
  9. Refrigerate the rolls for at least 8 hours, or overnight.
  10. The next morning, remove the pan from the refrigerator 1 hour before baking to allow the rolls to warm slightly. Preheat your oven to 375°F (190°C).
  11. Bake for 20-25 minutes, or until golden brown.
  12. While the rolls cool slightly, whisk together the powdered sugar and 2 tablespoons of milk for the glaze. Drizzle the glaze over the warm rolls before serving.

  • For a savory option, substitute the filling ingredients with 1 cup shredded cheddar cheese and 1/2 cup cooked, crumbled sausage.
