Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup bourbon
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups pecan halves
  • 1/2 cup granulated sugar
  • 1/4 cup light corn syrup
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract, bourbon, and almond extract.
  4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Press about two-thirds of the dough evenly into the bottom of the prepared baking pan.
  6. In a medium bowl, combine the pecan halves, granulated sugar, corn syrup, and melted butter. Stir until the pecans are evenly coated.
  7. Spread the pecan mixture evenly over the dough in the pan.
  8. Dot the remaining one-third of the dough over the pecan layer.
  9. Bake for 35-45 minutes, or until the edges are golden brown and the center is set.
  10. Let the bars cool completely in the pan before cutting into squares.

Notes
