Follow this simple recipe to bake moist, flaky cod fillets topped with a rich lemon butter and breadcrumb crust.

- 1.5 lb cod fillets, about 1 inch thick
- 4 tablespoons unsalted butter, melted
- 1 cup dry breadcrumbs (or crushed saltine crackers)
- 1/4 cup fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking dish large enough to hold the cod fillets in a single layer.
- Pat the cod fillets dry with paper towels. Place the fillets in the prepared baking dish. Season the fish lightly with salt and pepper.
- In a small bowl, combine the melted butter, breadcrumbs, lemon juice, chopped parsley, remaining salt, pepper, and paprika. Mix until the crumbs are evenly moistened.
- Spoon the crumb mixture evenly over the top of each cod fillet, pressing gently so the topping adheres.
- Bake for 12 to 15 minutes, or until the fish is opaque throughout and flakes easily with a fork. Cooking time depends on the thickness of the fillets.
- Remove from the oven and let stand for 2 minutes before serving.
Notes
- For extra moisture, you can place a thin layer of water or white wine in the bottom of the baking dish before adding the fish.
- Substitute cracker crumbs for breadcrumbs to achieve a slightly saltier, crispier topping common in some New England preparations.
- If your fillets are thinner than 1 inch, reduce the baking time to 10 minutes.
