  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt

  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

  • 1/4 cup fresh blueberries
  • 1/2 cup powdered sugar for dusting


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Prepare the crust: In a medium bowl, whisk together 1 1/2 cups flour, 1/2 cup powdered sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake the crust for 15 minutes until lightly golden.
  4. Prepare the filling: While the crust bakes, whisk together the eggs, granulated sugar, 1/4 cup flour, lemon juice, lemon zest, and baking powder in a separate bowl until smooth.
  5. Pour the lemon filling mixture evenly over the hot, pre-baked crust. Sprinkle the fresh blueberries over the top of the filling.
  6. Return the pan to the oven and bake for 25 to 30 minutes, or until the filling is set and a toothpick inserted near the center comes out mostly clean. The edges should be lightly golden.
  7. Let the bars cool completely in the pan on a wire rack. This cooling time is important for the filling to set properly.
  8. Once cool, lift the bars out of the pan using the parchment paper overhang. Cut into 16 squares.
  9. Dust the tops of the squares with powdered sugar before serving.
