A simple, cold pasta salad combining classic BLT sandwich flavors with a creamy dressing, perfect for summer meals or potlucks.

- 1 pound rotini pasta
- 1 pound bacon, cooked and crumbled
- 2 cups cherry or grape tomatoes, halved
- 1 cup red onion, finely chopped
- 4 cups chopped romaine lettuce, washed and dried
- 1 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons white wine vinegar
- 1 tablespoon sugar
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Cook the rotini pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop cooking. Set aside to cool completely.
- In a large bowl, whisk together the mayonnaise, sour cream, white wine vinegar, sugar, and Dijon mustard until smooth. Season the dressing with salt and pepper.
- In a separate large bowl, combine the cooled pasta, crumbled bacon, halved tomatoes, and chopped red onion.
- Pour the dressing over the pasta mixture and toss gently until everything is evenly coated.
- Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld.
- Just before serving, gently fold in the chopped romaine lettuce. Do not add the lettuce until immediately before serving to keep it crisp.
- Taste and adjust seasoning if necessary before serving cold.
Notes
- Use rotini or small shell pasta for the best texture to hold the dressing.
- To keep the lettuce crisp, wash and dry it thoroughly several hours ahead of time and store it in the refrigerator in a sealed container with a paper towel.
- For a tangier dressing, substitute half of the mayonnaise with plain Greek yogurt.
- Add 1/2 cup of shredded cheddar or Monterey Jack cheese for extra flavor.
