Description

A simple, cold pasta salad combining classic BLT sandwich flavors with a creamy dressing, perfect for summer meals or potlucks.


Ingredients

  • 1 pound rotini pasta
  • 1 pound bacon, cooked and crumbled
  • 2 cups cherry or grape tomatoes, halved
  • 1 cup red onion, finely chopped
  • 4 cups chopped romaine lettuce, washed and dried
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons white wine vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste


Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop cooking. Set aside to cool completely.
  2. In a large bowl, whisk together the mayonnaise, sour cream, white wine vinegar, sugar, and Dijon mustard until smooth. Season the dressing with salt and pepper.
  3. In a separate large bowl, combine the cooled pasta, crumbled bacon, halved tomatoes, and chopped red onion.
  4. Pour the dressing over the pasta mixture and toss gently until everything is evenly coated.
  5. Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld.
  6. Just before serving, gently fold in the chopped romaine lettuce. Do not add the lettuce until immediately before serving to keep it crisp.
  7. Taste and adjust seasoning if necessary before serving cold.

Notes

  • Use rotini or small shell pasta for the best texture to hold the dressing.
  • To keep the lettuce crisp, wash and dry it thoroughly several hours ahead of time and store it in the refrigerator in a sealed container with a paper towel.
  • For a tangier dressing, substitute half of the mayonnaise with plain Greek yogurt.
  • Add 1/2 cup of shredded cheddar or Monterey Jack cheese for extra flavor.
