Ingredients
Scale
- 2 cups cooked, shredded or diced chicken
- 6 slices bacon, cooked and crumbled
- 1 cup chopped romaine lettuce
- 1 medium tomato, seeded and diced
- 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Place the cooked chicken in a medium bowl.
- Add the crumbled bacon, chopped lettuce, and diced tomato to the bowl with the chicken.
- In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), Dijon mustard, apple cider vinegar, and garlic powder.
- Pour the dressing mixture over the chicken and vegetable mixture.
- Stir gently until all ingredients are evenly coated.
- Season with salt and pepper to your preference.
- Serve immediately or chill for later use.
Notes
- For a low-carb option, substitute the lettuce with finely chopped celery for added crunch.
- If you prefer a tangier flavor, add 1 tablespoon of sweet pickle relish.
- This salad works well served on lettuce wraps, in a sandwich, or eaten with crackers.
