- Gently wash and sort the black raspberries, removing any stems or leaves.
- In a large, heavy-bottomed pot, combine the black raspberries, sugar, and lemon juice.
- Stir the ingredients together until the sugar is evenly distributed.
- Place the pot over medium-high heat and bring the mixture to a rolling boil, stirring frequently.
- Once boiling, reduce the heat slightly to maintain a vigorous boil and continue cooking, stirring often, for about 15-20 minutes.
- The jam is ready when it thickens and coats the back of a spoon. You can test for doneness by placing a small amount on a chilled plate; it should set.
- Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
- Wipe the rims of the jars clean and secure the lids.
- Process the jars in a boiling water bath for 10 minutes (adjusting for altitude if necessary).
- Remove the jars from the water bath and let them cool completely on a towel-lined surface.
