  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 cups fresh or frozen black raspberries
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice


Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft dough.
  6. Press about two-thirds of the dough evenly into the bottom of the prepared baking pan to form the crust.
  7. In a medium bowl, gently toss the black raspberries with 1/4 cup sugar, cornstarch, and lemon juice.
  8. Spread the raspberry mixture evenly over the crust.
  9. Crumble the remaining one-third of the dough over the raspberry layer.
  10. Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
  11. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For frozen black raspberries, do not thaw before using. You may need to increase baking time slightly.
  • You can add a pinch of cinnamon to the crumble topping for extra flavor.
