Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, beat the softened butter and 1 cup of the granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- In a shallow dish, combine the remaining 1/2 cup of granulated sugar and the 3 tablespoons of cinnamon. This is your coating mixture.
- Scoop rounded tablespoons of dough and roll them into smooth balls.
- Roll each dough ball thoroughly in the cinnamon-sugar mixture until completely coated. For an extra thick crust, roll the dough ball in the mixture a second time.
- Place the coated balls about 2 inches apart on the prepared baking sheets.
- Bake for 9 to 11 minutes. The edges should look set, but the centers should still look slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
