Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius).
  2. Toss the cut potatoes with olive oil, salt, and pepper on a large baking sheet. Spread them in a single layer.
  3. Roast for 30 to 35 minutes, flipping them halfway through, until the edges are golden brown and crisp and the centers are tender.
  4. While the potatoes roast, prepare the dressing by whisking together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, smoked paprika, and garlic powder in a small bowl.
