  • 1/2 cup vegetable oil
  • 2 large eggs

  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips (optional)


Instructions

  1. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  2. In a separate bowl, mix the grated zucchini, granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  4. Fold in the chopped nuts and chocolate chips if you are using them.
  5. Grease a crockpot and line with parchment paper, leaving some overhang to easily lift the bread out later.
  6. Pour the batter into the prepared crockpot.
  7. Cover and cook on high for 1.5 to 2 hours, or on low for 2.5 to 3 hours, or until a toothpick inserted into the center comes out clean.
  8. Once cooked, carefully remove the bread from the crockpot using the parchment paper overhang. Let it cool on a wire rack before slicing and serving.
