Instructions
- Brown the butter: Melt the butter in a saucepan over medium heat. Continue cooking, swirling often, until the milk solids toast and turn dark brown, about 5-8 minutes. Immediately pour into a heatproof bowl to cool slightly.
- In a large bowl, whisk the slightly cooled brown butter, brown sugar, and granulated sugar until just combined.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Fold in the chocolate chips.
- Cover the dough and chill for at least 2 hours, or up to 72 hours, for best texture.
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- Scoop large balls of dough (about 3 tablespoons each) onto the prepared sheets, leaving space between them.
- Bake for 10-13 minutes. The edges should look set, but the centers should still look slightly underbaked and soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
