Ingredients
Scale
- 1 tablespoon butter
- 1/4 cup all-purpose flour
- 1 cup milk
- 1/2 teaspoon mustard powder
- 1/4 teaspoon garlic powder
- Pinch of cayenne pepper
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded Gruyère cheese
- 1/2 cup beer (lager or ale recommended)
- Salt and black pepper to taste
- Soft pretzels for dipping
Instructions
- Melt the butter in a medium saucepan over medium heat.
- Whisk in the flour until smooth, cooking for one minute. This is your roux.
- Gradually whisk in the milk until the mixture thickens slightly.
- Stir in the mustard powder, garlic powder, and cayenne pepper.
- Reduce the heat to low. Slowly add the shredded cheeses, stirring constantly until fully melted and smooth. Do not boil.
- Pour in the beer and stir until fully combined and creamy.
- Season with salt and pepper to your liking.
- Transfer the dip to a serving bowl. Serve warm immediately with soft pretzels.
Notes
- You can substitute other sharp melting cheeses for Gruyère if you prefer.
- Use a light-colored beer so it does not overpower the cheese flavor.
- Keep the heat low when adding cheese to prevent the sauce from becoming grainy.
