Description

Quick and cheesy BBQ Pulled Pork Quesadillas made with leftovers. Perfect for a fast and satisfying meal.


Ingredients

  • 2 cups leftover BBQ pulled pork
  • 4 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 2 tablespoons butter or oil


Instructions

  1. Warm the leftover BBQ pulled pork.
  2. Lay out two tortillas. Sprinkle half of the cheese over each tortilla.
  3. Top the cheese with half of the pulled pork on each tortilla.
  4. Fold the other two tortillas in half and place them on top of the filling.
  5. Heat butter or oil in a large skillet over medium heat.
  6. Carefully place the quesadillas in the skillet. Cook for 3-4 minutes per side, until golden brown and the cheese is melted.
  7. Cut into wedges and serve immediately.

Notes

  • You can add your favorite BBQ sauce to the pulled pork for extra flavor.
  • Consider adding diced onions or jalapeños for a spicy kick.
  • Serve with sour cream, salsa, or guacamole.
