Quick and cheesy BBQ Pulled Pork Quesadillas made with leftovers. Perfect for a fast and satisfying meal.

- 2 cups leftover BBQ pulled pork
- 4 large flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 2 tablespoons butter or oil
Instructions
- Warm the leftover BBQ pulled pork.
- Lay out two tortillas. Sprinkle half of the cheese over each tortilla.
- Top the cheese with half of the pulled pork on each tortilla.
- Fold the other two tortillas in half and place them on top of the filling.
- Heat butter or oil in a large skillet over medium heat.
- Carefully place the quesadillas in the skillet. Cook for 3-4 minutes per side, until golden brown and the cheese is melted.
- Cut into wedges and serve immediately.
Notes
- You can add your favorite BBQ sauce to the pulled pork for extra flavor.
- Consider adding diced onions or jalapeños for a spicy kick.
- Serve with sour cream, salsa, or guacamole.
