Delicious vegan sliders featuring BBQ jackfruit, a perfect plant-based alternative to pulled pork.


Ingredients

  • 2 cans (15 ounces each) young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup your favorite BBQ sauce
  • 1/4 cup vegetable broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 12 small slider buns
  • Optional toppings: coleslaw, pickles, red onion slices


Instructions

  1. Drain and rinse the jackfruit. Pat it dry with paper towels. Remove any hard core pieces and shred the jackfruit with your fingers or two forks to resemble pulled pork.
  2. Heat the olive oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the shredded jackfruit and cook for 5 minutes, stirring occasionally, until it starts to brown slightly.
  5. Pour in the BBQ sauce, vegetable broth, apple cider vinegar, smoked paprika, and chili powder. Stir to combine.
  6. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 20-25 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the flavors.
  7. Season with salt and black pepper to taste.
  8. Toast the slider buns if desired.
  9. Fill each slider bun with a generous portion of the BBQ jackfruit.
  10. Add your favorite toppings like coleslaw, pickles, or red onion slices.
  11. Serve immediately.

Notes

  • Ensure you use young green jackfruit in brine for the best texture. Ripened jackfruit is sweet and not suitable for this recipe.
  • The cooking time allows the jackfruit to become tender and absorb the BBQ sauce flavor. Don’t rush this step.
  • Feel free to adjust the amount of smoked paprika and chili powder to your spice preference.
