- 1 ripe banana, mashed
- 1 cup rolled oats
- 1 large egg
- 1/2 cup milk (any kind)
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Butter or oil for the griddle
Instructions
- Combine the mashed banana, oats, egg, milk, baking powder, vanilla extract, and salt in a blender or food processor.
- Blend until the mixture is mostly smooth, leaving a few tiny oat flecks for texture.
- Let the batter rest for 5 minutes. This allows the oats to absorb some liquid.
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Pour about 1/4 cup of batter per pancake onto the hot surface.
- Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes until golden brown.
- Serve immediately with your favorite toppings.
Notes
- For a sweeter pancake, add a teaspoon of maple syrup to the batter.
- If the batter seems too thick, add milk, one tablespoon at a time, until you reach your desired consistency.
- These pancakes freeze well. Cool completely before storing in an airtight container.
- Top with fresh berries or a drizzle of honey for extra flavor.
