Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large bowl, toss the cut carrots with olive oil, balsamic vinegar, maple syrup, dried thyme, salt, and pepper until evenly coated.
- Spread the seasoned carrots in a single layer on a large baking sheet lined with parchment paper.
- Roast for 25 to 30 minutes, stirring halfway through, until the carrots are tender and slightly browned at the edges.
- Remove from the oven and serve immediately.
Notes
- For extra flavor, you can add 1 minced garlic clove to the coating mixture before roasting.
- If you prefer a stronger tang, reduce the maple syrup to 2 teaspoons.
