Description

This cake brings the cozy flavors of bakery-style apple cider donuts into a simple cake form. It’s perfect for fall.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, melted
  • 1/2 cup unsweetened apple cider, reduced
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the topping:
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, melted


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate medium bowl, whisk together the melted butter, reduced apple cider, buttermilk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter evenly into the prepared baking pan.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the topping. In a small bowl, whisk together the sugar and cinnamon. In another small bowl, melt the butter.
  8. Once the cake is out of the oven, immediately brush the top with the melted butter.
  9. Sprinkle the cinnamon sugar mixture evenly over the top of the cake.
  10. Let the cake cool in the pan for at least 15 minutes before slicing and serving.

Notes

  • To reduce the apple cider, simmer 1 cup of unsweetened apple cider in a small saucepan over medium heat until it has reduced to 1/2 cup. This will take about 10-15 minutes. Let it cool before using.
  • Make sure your buttermilk and eggs are at room temperature for best results.
  • Store any leftover cake in an airtight container at room temperature for up to 3 days.
