This cake brings the cozy flavors of bakery-style apple cider donuts into a simple cake form. It’s perfect for fall.

- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup unsalted butter, melted
- 1/2 cup unsweetened apple cider, reduced
- 1/2 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- For the topping:
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate medium bowl, whisk together the melted butter, reduced apple cider, buttermilk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter evenly into the prepared baking pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the topping. In a small bowl, whisk together the sugar and cinnamon. In another small bowl, melt the butter.
- Once the cake is out of the oven, immediately brush the top with the melted butter.
- Sprinkle the cinnamon sugar mixture evenly over the top of the cake.
- Let the cake cool in the pan for at least 15 minutes before slicing and serving.
Notes
- To reduce the apple cider, simmer 1 cup of unsweetened apple cider in a small saucepan over medium heat until it has reduced to 1/2 cup. This will take about 10-15 minutes. Let it cool before using.
- Make sure your buttermilk and eggs are at room temperature for best results.
- Store any leftover cake in an airtight container at room temperature for up to 3 days.
