  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs

  • 2 large eggs, beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Olive oil spray


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine Parmesan cheese, panko breadcrumbs, garlic powder, black pepper, and salt.
  3. In another shallow dish, place the flour. In a third shallow dish, beat the eggs.
  4. Dip each zucchini stick first into the flour, shaking off excess.
  5. Then, dip the floured zucchini into the beaten eggs, letting any excess drip off.
  6. Finally, coat the zucchini thoroughly with the Parmesan and breadcrumb mixture.
  7. Place the coated zucchini fries in a single layer on the prepared baking sheet.
  8. Lightly spray the tops of the zucchini fries with olive oil spray.
  9. Bake for 18-20 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve immediately with your favorite dipping sauce.
